Applesauce Raisin Muffins

These applesauce muffins are great in taste and serve as a perfect tea time or evening snack for the family. Made with rich ingredients and baked to perfection, your kids will keep wanting these muffins every single day.

(Please note that you don't have to use the exact brand of product I have used here. You may use any brand you want).

 

Ingredients:

1. 8.5 ounces of King Arthur whole wheat flour.

2. Two medium sized eggs, whisked slightly.

3. Half a cup of Farmer's Market organic canned pumpkin.

4. 2.5 ounces of whole buttermilk.

5. Four tablespoons of dark raising or sultanas.

6. Half a cup of applesauce.

7. Two ounces of Pure Wesson canola oil.

8. Four tablespoons of pecans, chopped.

9. A teaspoon of salt.

10. 65 grams of granulated white sugar.

11. A quarter teaspoon of Arm & Hammer baking soda.

12. Five ounces of dark brown sugar, packed.

13. Two teaspoons of Mccormick pumpkin pie spice.

14. A teaspoon of Rumford baking powder.

 

Preparation:

1. Power on the oven and preheat it to about 400 degrees Fahrenheit. Take a large bowl and add in the whole wheat flour, Mccormick pumpkin pie spice, baking powder, baking soda and salt. Mix the ingredients together and leave it aside.

2. Take another bowl and add in the packed dark brown sugar, applesauce, canola oil, whole buttermilk and the canned pumpkin. Stir the ingredients well. Now transfer this mixture into the flour mixture and mix again. Add in the chopped pecans along with the dark raisins and stir.

3. Now take a muffin pan and smear butter into eleven or twelve muffin cups. Spoon out the mixture equally into each greased muffin cup and then place the muffin pan in the oven. Bake for about 18 minutes or till the applesauce muffins are done. To check if the applesauce muffins are done, prod a fork into the muffins and see if it comes out without any dough sticking to it..
